Fruit puffs served with Clover Classic Custard

Plum and pineapple  Puffs with Clover Classic Custard
 
INGREDIENTS
125g caster sugar
½  lemon, juiced
1 piece lemon peel
1 T vanilla paste
4 purple plums, sliced in half 
Pineapple, sliced into wedges
1 sheet  puff pastry
1 egg, lightly beaten
 
Half-fill a saucepan with cold water. Add sugar, lemon juice and peel and vanilla paste. Stir over low heat to dissolve the sugar. Add plums then place a piece of greaseproof paper on top of liquid and simmer until just tender (the time depends on ripeness of plums). Remove and allow to cool. 
Grill the pineapple and brush it with the syrup. 
 
Preheat oven to 190°C. Roll out squares of puff pastry big enough to fit the fruit, with space around it. Place the fruit onto the middle of each pastry square. 
Use a sharp knife to cut a small indent around each piece of fruit. Brush exposed pastry with egg and bake for 20-25 minutes or until pastry is puffed and golden. Serve with Clover Classic custard.
