Frittata on Afternoon Express

12 eggs
1 cup caramelized onions
1 cup cooked spinach
½ feta cheese
1 red onion peeled
1 red pepper
Fresh Rosemary
Tub mascarpone
1 cup grated mature cheddar
Italian Parsley

Preheat oven to 180’C. Fry off the onion until caramelized. Add the red pepper and spinach to the pan and allow the spinach to wilt. In a bowl beat the eggs, feta and mascarpone together and pour into the pan. Top egg mixture with feta cheese and transfer to the oven until cooked through and golden, about 10-15 minutes.
