Fried ravioli with Clover cheese sauce

Fried ravioli with cheese sauce and spicy salsa

For the cheese sauce
3T butter
2T flour
1 3/4 cup milk
100g Clover white cheddar, grated
100g Clover gouda cheese, grated
Salt and freshly ground black pepper to taste
2T chipotle based hot sauce

For the salsa
1t ground coriander
1t smoked chilli flakes
Salt and freshly ground black pepper to taste
3T olive pride
1 lime, zested and juiced
2 ripe tomatoes, roasted whole until well charred
1 spring onion stalks, thinly sliced
2 cloves roasted garlic, finely chopped
6T roughly chopped coriander
250g slow cooked beef ravioli
Olive pride to deep fry
Clover herbed feta to crumble over

Heat the butter in a pot over a medium heat before adding the flour and stirring through, cooking for about 1 minute to cook out the flouriness.
Slowly begin adding the milk and mixing through until the sauce becomes thick, and by continuing to stir you’ll prevent any lumps forming.
Once all the milk has been added slowly add the cheese and mix through until well combined and a smooth cheese sauce is formed. Add some seasoning along with the chipotle based hot sauce and stir through.
For the salsa: combine the ground coriander, chilli flakes and seasoning in a bowl before mixing with the olive pride, lime zest and juice. Remove the charred skin of the tomato and cut the tomatoes into quarters then remove the pulp. Cut the flesh of the tomatoes into chunks and add to the mixing bowl with the oil mixture. Stir through the spring onion, roasted garlic and fresh coriander tossing to combine all the ingredients.
Heat the olive pride for deep frying: Add the ravioli to the oil allowing it to become golden and crisp and cooked through. This would take about 3 minutes folding the ravioli through the oil to ensure even browning.
Remove the crispy ravioli and place on absorbent kitchen paper to drain off any excess oil before seasoning lightly with salt.
Serve the ravioli on a serving platter with the cheese sauce drizzled over, spoon some of the salsa over and finish with a garnishing of fresh coriander.
