Freshpak Junior Peach & Apricot Iced Tea with Frozen Apricot Ice pops

Makes 1 Litre
4-5 Freshpak Junior Peach & Apricot teabags
1 lemon, zested and juiced
6 apricots, stones removed
2 apple, peeled and roughly chunked
Prepare the Freshpak Junior Peach & Apricot tea in a pot using 4 cups of water. After steeping add the apricots and apple cooking until the fruits are soft. Add the tea and fruit to a blender, discarding the teabags.
Blend until smooth then add to ice cream molds - or into paper cups with popsicle sticks. Place them in the freezer to set for 4-6 hours or until solid and frozen before removing from the mold and serving.
