
Flourless chocolate banana bread

Serves: 1 Loaf

Ingredients
3 medium ripe bananas
2 cups oats
2 large eggs
1/4 cup honey
1 tsp baking soda
1 cup chocolate, cut into small pieces
3/4 cup ginger
1/2 cup blueberries
1 cup double cream plain yoghurt
melted butter to grease loaf tin
Frosting
¼ cup butter, soft
½ cup banana, mashed
½ tsp lemon juice
½ tsp vanilla paste
¼ cup icing sugar
¼ cup cocoa powder
Method
Pre-heat oven to 180°C
Lightly grease 23×13cm loaf pan with non-stick cooking spray and set aside.
Add all ingredients (except chocolate chips, yoghurt and blueberries) into a blender and blend until smooth and well combined. You can also use a hand blender. Pour batter into a prepared loaf pan. Add the chocolate chips into the batter and use a spoon to evenly distribute it into the batter. Garnish the top of the batter with thinly sliced banana (if desired).Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let loaf cool in loaf pan. Remove the loaf form the loaf tin and slice. Plate as desired with any toppings of your choice. We love it with double cream yoghurt and fresh blueberries. Enjoy!
