Figs roasted with orange zest and brown sugar with amaretto mascarpone cream

Serves: 4
Preparation time: 5-10min
Cooking time: 20min

8-10 figs
Julienne zest and juice of 1 ripe orange
3 tablespoons honey
20g Demerara sugar
50g coarsely crushed Amaretti biscuit
  
Preheat oven to 200’c
Cut each fig in half lengthways.
Place on a baking tray/ oven proof dish.
Drizzle over the juice and the honey.
Mix together the zest , sugar and amaretti crumbs and scatter over the figs
Bake for 20 minutes or until golden
Serve with amaretto cream and extra amaretti biscuits on the side.
  
Amaretto Cream  
100ml Mascarpone
100ml Double cream
2 tablespoons castor sugar
2-3 tablespoons Amaretto liqueur
  
Mix all the ingredients in a medium bowl, using a hand whisk.
Adjust the amount of liqueur and sugar to taste.
Refrigerate until serving.
