Easy peasy chicken pie

Easy Peasy Chicken Pie

2 T Olive oil
2 T Butter
2 Leeks, sliced
6 Brown mushrooms, torn
1 Roast chicken, shredded into large pieces
1 cup Cream
Salt and pepper, to season
8 sheets Phyllo pastry

Preheat oven to 180c.
In a medium cast iron pan heat half the olive oil and half the butter.
Gently fry the leeks until soft.
Add the remaining olive oil and cook the mushrooms.
Add the chicken and cream.
Cook for 5 minutes over a medium heat.
Season.
Melt the remaining butter.
Top with chicken with scrunched up Phyllo pastry and drizzle over melted butter.
Bake for 15 minutes or until golden brown.
