Easy Butternut and Sweet Potato Tart

2 sheets of all butter puff pastry
1 packet diced butternut
1 packet diced sweet potato
125g butter
cinnamon sugar
5g thyme
salt
Pre-heat the oven to 200’c. Remove the frozen pastry from the packet and work quickly to keep the pastry ice cold. Trim 4 strips of 1cm to make a rectangular shape. Place the larger pastry sheets overlapping only 1cm on a baking tray to make a rectangular tart. Press down with your fingers slightly on the overlapping piece. Use the trimmed pieces of pastry, twist them and place around the edges of the tart. Use a pastry brush and paint the pastry with milk. The pastry needs to remain very cold, otherwise place back in the fridge. Bake for 15-20mins until cooked and golden brown. Remove from the oven and keep on the side.
For the filling
Melt the butter in a large saucepan and add butternut and sweet potato pieces. Cook until golden brown and when they start to soften, generously dust with the cinnamon sugar. Season with salt and add fresh thyme. Don’t stir, rather shake the pan the prevent the cooked pieces from breaking up. Carefully spoon the cooked pumpkin and butternut on to the baked pastry shell. Drizzle with a little honey and place back in the oven for 10mins. Garnish with sugar or caramelised citrus. Serve with crème fraiche or yoghurt on the side.
