Deep Fried Chicken

4 eggs
60 ml (4 tbsp) water
250 ml (1 cup) hot chilli sauce
260 g (2 cups) cake wheat flour
5 ml (1 tsp) paprika
15 ml (1 tbsp) mixed dried herbs
15 ml (1 tbsp) baking powder
salt and black pepper
oil for deep-frying
1 kg chicken pieces

In a mixing bowl, beat eggs with water. Add hot sauce and whisk together.
2. In another mixing bowl, combine flour, paprika, mixed herbs,
baking powder, salt and pepper.

3. Heat oil in a large, deep pot. Drop a few chicken pieces into the egg mixture and coat thoroughly. One piece at a time, roll chicken in the flour mixture and drop into hot oil. Fry chicken until brown and crisp. Drain on paper towel
