2 cups fresh medjool dates / dried dates soaked in 2 cups of boiling water for 45 minutes
½ cup – 1 cup hot water
1 cup coconut milk
½ cup maple syrup/ coconut nectar
½ cup macadamia nut powder / any smooth nut butter
5ml vanilla paste/ essence
Maldon salt

To make:
If you’re using dried dates that have been soaked reserve ½ cup of the soaking liquid and drain the rest.
Add the dates and hot water to a high-speed blender and blend until smooth, adding more water if needed.
Add the coconut milk, maple syrup, macadamia butter , vanilla and a pinch of salt and blend until smooth and well combined.
Serve with French toast, pancakes, flapjacks or spoon into your hot chocolate or cappuccino . Drizzle over vanilla ice cream or enjoy on its own. Use as a pie filling, swirl into oats or use it in a smoothie.
To store pour into a glass jar, seal tightly and refrigerate. Keeps up to 2 weeks in the fridge.
