Curried Lamb Ribs

2kg lamb ribs
2 cups plain yoghurt
Roti to serve

For the curry paste: Blend together
6cm piece of ginger, roughly chopped
6 loves of garlic
1 red onion, cut into wedges
4 red chilies
6T roughly chopped coriander
2T ground turmeric
2T ground coriander
2T ground cumin
1T crushed mustard seeds
3T tomato paste
Salt and freshly ground black pepper to taste

For the sambal: combine
2 ripe tomatoes, cut into rough cubes
1 red onion, finely diced
5T finely chopped coriander
1 red chilli, finely diced
2T brown sugar
1/2 cup brown vinegar

For the raita: combine
1/2 cucumber, seeds removed before grating
2 cloves garlic, finely grated
1 cup plain yoghurt
4T roughly chopped coriander
2T finely chopped mint
Salt and black pepper to taste

Add the ribs to a mixing bowl before adding the yoghurt and the curry paste. Mix well then add to an oven dish to slowly roast in the oven at 160C for about 1 hour before turning the heat up to 180C and cooking for another 15 minutes. Serve with the raita, sambal and warm roti
