Crispy Beef Lettuce Wraps

Preparation time: 10 minutes
Chilling time: 15- 20minutes
2T Canola oil
500g Beef mince
4 cloves garlic, finely chopped
6cm Ginger finely chopped
1 red chilli, thinly sliced
3T sesame seeds
100g cashews, roughly chopped
2T fish sauce
30g mint roughly torn
15g coriander roughly torn
Woolworths fine rice noodles, prepared as per instructions
Cos lettuce 1 head
Spring onions to garnish
Crispy fry the mince in the canola oil until evenly golden brown. Add the garlic, ginger and chilli, fry for another 2 minutes before adding the sesame seeds and cashews. Toast in the pan before setting aside.
Add the fish sauce and herbs then toss through. Place the lettuce cups on a serving dish fill with some noodles and top with the crispy mince.
Garnish with extra coriander and spring onion.
