Creamy roast cauli soup

1 large cauliflower, cut into florets
80g softened
Salt and pepper
1 Onion, chopped
2 cloves garlic, crushed
500ml vegetable stock
1 cup cream
1 tsp ground nutmeg
Thyme and extra roasted cauliflower florets for garnishing

1. Place the cauliflower florets onto a roasting property. Dot with the butter and season with salt and pepper. Place into the oven to roast until golden and tender, about 20 minutes.
2. Add a dash of oil to a pot. Saute the onion and garlic until translucent. Add the roasted cauliflower to the pot.
3. Add the vegetable stock along with the cream. Bring to a light simmer and season with nutmeg, salt and pepper. Blend the soup with a stick blender until smooth. Add more liquid if necessary. Garnish with parsley and roasted cauliflower florets and serve warm.
