Cold Smashed cucumber and prawn salad

Serves: 4
Preparation time: 15 minutes
Cooking time: 15 minutes
1 cucumber, peeled
200g cooked and peeled prawns
170g whole-wheat noodles
2 red spring onions, thinly sliced
1 handful of basil
1 sprig mint leaves removed.
For the dressing:
¼ cup rice vinegar
2T fish sauce
2T brown sugar
6cm ginger, finely grated
2 garlic cloves, finely grated
1 red chilli, finely grated
Cut the cucumber into 4 pieces before adding to a pestle and mortar and pounding until chunky but broken down. Add to a mixing bowl along with the prawns, cooked noodles and toss together.
Combine all the ingredients for the dressing, stirring until the sugar has dissolved. Pour over the prawns and cucumber before adding to the serving dish.
Garnish with the red onions, basil and mint before serving.
