Simple Coconut, lemon and Dark Chocolate Macaroons

3 cups desiccated coconut
1 lemon, zest
4 egg whites
Pinch sea salt
1 tablespoon Xylitol
1 cup shaved coconut
100g Dark Chocolate, melted
Preheat the oven to 180’c and line a baking tray with baking paper. Whisk the egg white and salt until stiff peaks form. Fold in the lemon zest, Xylitol and desiccated coconut. Use an ice cream scoop to form rounds and roll in shaved coconut. Place on lined tray and bake until golden, roughly 12mins. Allow macaroons to cool and then dip or drizzle in melted chocolate and allow chocolate to harden or simply enjoy immediately.
