Coconut cauliflower brown rice risotto

Coconut cauliflower brown rice risotto

1 T coconut oil
2 leeks chopped finely
1 cup brown rice
2 cups Coconut water
100g peanuts chopped
Salt to to season

Extra add ons
Lime zest
Cauli chunks fried in harissa
Toasted dedicated coconut

Heat the coconut oil in a pan.
Add the leeks and cook over a low heat until soft.
Add the rice and a half coconut water. Simmer until rice is cooked, adding coconut water as you go.
The rice should still be nutty.
Stir in the peanuts.
Season.
Top with some or all of the add ons
