Coconut and Vanilla baked Rice Pudding

Ingredients
3 knobs butter
2 cups fragrant rice ( rinsed)
2 tins coconut milk
1 vanilla pod ( seeds only)
pinch of salt
4 eggs
2 Tbs Vanilla paste

1/4 cup castor sugar
2-4 cups Clover full cream milk
1/2 cup butter (cubed)
1/2 cup toasted coconut flakes

For Caramelize Plums
4 Plums ( sliced)
4 Tbsp brown sugar
4Tbsp butter

Methode
Melt butter in sauce pan
Add rice and sauté so that butter coat the rice
Add coconut milk, vanilla and salt then simmer slowly while stirring now and then so rice don't stick to the bottom
Once rice is cooked cool down rice
While cooling rice whisk together sugar and eggs and vanilla paste
Decant rice into a oven proof dish and stir through egg mixture and milk
Dot the pudding with cubed butter before placing in oven at 160C to bake till golden brown and bubbly

For Caramelized Plums

Melt butter in a shallow pan
Add sliced Plums and brown sugar
Allow to cook till plums are cooked and caramelize
Serve baked rice pudding topped with toasted coconut flakes and plums .
