Clover Zesty Seared Cauliflower and Chickpea Poke bowl

Serves 4

For The Base
1 cup Clover Bliss yoghurt, plain
 2 cloves crushed garlic
1½ teaspoon ground cumin
1tablespoon fresh lemon juice.
2 tablespoons hummus
1 tablespoon lemon zest
2 Tablespoons chopped fresh coriander
2 tablespoons chopped chives
Salt and pepper to taste
2 tablespoons diced red pepper
Method
1. Stir together all the ingredients and let them mingle so that the flavour develops.
 
 The Topping
1 1/2 cups cauliflower florets thinly sliced
½ teaspoon turmeric
1 teaspoon ground cumin
½ teaspoon cayenne pepper
3 tablespoons olive or vegetable oil
Salt and pepper to taste
1 cup deep-fried chickpeas 
1 large tomato seeds removed cut into small cubes
2 tablespoons chopped parsley                                               
 
Method 
1.Toss together the cauliflower, spices and olive oil, season with salt and pepper.
2. Heat a large frying pan and add the cauliflower, fry till it takes on some colour and is a little charred.
3. Spoon the sauce into a bowl and layer the cauliflower with the chickpeas, tomatoes and parsley.
4. Just before serving toss everything together.
5. Serve with Chunks of crusty bread.
 
 
Fried Chickpeas
These are delicious just as a snack
1 can chickpeas well drained and spread out to dry.
Oil for frying
1/2 teaspoon Paprika
1/2 teaspoon Salt
1/2 teaspoon ground cumin
 
Method
1. Heat enough oil to coat the bottom of frying pan.
2. Add the chickpeas and sauté till crisp and golden, remove and drain on paper towel.
3. Mix together the paprika, salt and cumin and scatter over the chickpeas.
