Umleqwa with steamed Amasi bread

Umleqwa with steamed Amasi bread

1 whole free-range chicken, cut into 6 pieces
1 onion, chopped
½ green pepper, chopped
2 tomatoes, chopped
1 T roasted masala
salt and pepper
1-litre chicken stock
handful fresh parsley, chopped

To a saucepan, add a dash of oil and add the chicken pieces. Allow to brown then add in the chopped onion and green pepper. Add the chopped tomatoes and season with masala, salt and pepper. Allow to cook for a minute and pour in the stock. Add some of the fresh parsley and allow to simmer. In the meantime, prepare the steamed Amasi bread.

For the steamed Amasi bread
2 cups lukewarm water
1 cup Clover Amasi
1 tbsp instant yeast
1 tbsp salt
1 tablespoon brown sugar
4-5 cups bread flour

Combine the water, Amasi, sugar, salt and yeast in a large bowl.
Add the bread flour and mix well to form a dough. Transfer the dough into a greased bowl. Cover the bowl leave in a warm spot to double in size. Add water to a pot and place the bowl inside of the water. Cover and allow to steam until the bread is cooked. Slice and serve with stew.
