Tres Leches lime bars

1 cup cake flour
1 1/2t baking powder
5 free range eggs, separated
1 cup sugar
1t vanilla extract
1/3 cup milk
2 limes, zested and juice
1 can evaporated milk
1 can condensed milk
1/4 cup cream
For the icing; whip until stiff peaks form
1 cup whipping
2T icing sugar
2 limes, zested
Combine the flour, baking powder and salt together in a large mixing bowl. Beat the egg yolks with half the sugar, creaming it until it becomes light and fluffy becoming thick and voluminous. Add the vanilla and milk and mix through.
Add this mixture to the flour mixture and combine while folding through ensuring there are no lumps of sugar present in the mixture.
Whip the egg whites with the remaining sugar until soft peaks form. Fold the whipped egg whites through the flour batter along with the lime zest and juice. Pour this batter into a square or rectangle baking tin which has been greased with non stick cooking spray.
Place the baking tin in an oven thats been preheated to 180C to bake for 40 minutes or until a cake tester comes out clean after testing the cake.
While the cake is baking prepare the milk mixture. Add the evaporated milk, condensed milk and cream together in a pot and bring to gentle simmer.
Remove the baked cake from the oven and allow to cool until just warm, then poke holes in the cake using a skewer before pouring the milky mixture ensuring you evenly soak the cake in the mixture.
Allow the cake to soak in the mixture for up to 45 minutes before spreading over the cream mixture. Cut into cubes and serve.
