Clover Toasted cheese and veggie wrap

Toasted veggie wrap

Serves 4

1 red pepper, cut into chunks 
1 spring onion, cut into thin strips 
2 handfuls of baby spinach, roughly chopped
1 cup corn
4 slices of Clover processed cheese (this is for 1 slice per wrap, but you could make it 2 slices per wrap if you prefer)
4 Whole wheat wraps

Finely dice the peppers and mix with the spring onion, spinach, and corn. Tear the cheese into strips. Scatter the veggie mix over the wrap followed by the cheese before rolling into a sausage like shape.

Place in a panini press or toast in a pan, pressing down gently to form a crust. If you’re preparing your wrap in a pan, turn over once golden and crisp and cook the other side in the same manner.

Cut the toasted cheese wrap into portions and serve hot.
