Sloppy Joe sweet potatoe spuds

Clover Sloppy Joe sweet potatoe spuds

2 Tbsp Canola oil
1 Onion, chopped
3 sprigs Thyme
3 cloves Garlic, minced
120g Mushrooms, sliced
2 cups Spinach/kale, thinly sliced
300g Shredded chicken
2 Tbsp Flour
1 ½ cups Clover Care milk
½  cup Mozzarella cheese, grated
4 whole sweet potatoes, cooked and cut in half lengthwise

Heat oil in a pan and fry the onions until soft and translucent.

Add the thyme, garlic and mushrooms and cook until fragrant and the mushrooms browned. Add the spinach/kale and allow to cook down for about 6 minutes. Add the shredded chicken.
In a mixing bowl whisk together the flour and milk and add to the spinach mixture.
Bring to a boil before reducing the heat and allowing to simmer for 5 minutes until thickened and flour is cooked out.
Remove from the heat and stir in the cheese, season with salt and pepper.
To serve spoon about ½ cup of the spinach mixture.
