Clover Pride Chicken and Feta Sausage Rolls
Clover Chicken, Feta and Piquante pepper Sausage Rolls.
Recipe by Zach Abrahams
400g Chicken mince
½ cup Peppadews (chopped)
1/3 cup Clover Pride fat spread (melted)
¾ cup Clover Feta (crumbled)
1 handful Fresh parsley(chopped)
1 T Smoked paprika
1 roll Puff pastry
1 T Sesame seeds
1 T Sea salt
Flour (for rolling out pastry)
Pre-heat oven to 180 C. Combine chicken mince, piquant peppers, Clover Pride, feta, parsley, paprika and seasoning in a bowl and set aside.
Dust your kitchen counter with flour and roll puff pastry out into 1 big rectangle, cut the pastry into quarters so that you now have 4 smaller rectangles.
Shape ¼ of the chicken mixture to resemble a sausage the same length as your pastry, place “sausage” 2cm from the bottom length of 1 of your smaller rectangles, fold the top half of pastry over to close sausage roll and then crimp sausage roll down with a fork. Repeat with remaining pastry sheets and chicken mixture.
Place sausage rolls onto a flat baking tray lined with baking paper, brush with beaten egg, sprinkle with sesame seeds and sea salt. Place in the oven for 30 mins or until golden brown, allow to cool slightly. Using a bread knife, cut each sausage roll into 4 pieces and serve with a lovely winter salad.
