Olive Pride Orange & Thyme Cake

1 ½ cups Cake Flour
1 ½ cups Castor sugar
1t Baking powder
¼t Baking soda
2 Eggs (beaten)
2/3 cup Orange juice
2t Orange Zest
1T Fresh Thyme (picked and finely chopped)
2/3cup Clover Olive Pride Blend
Icing Sugar (for dusting)
To make this super simple and delicious cake, start by pre heating your oven to 190 C and greasing a 23cm springform baking tin.
Then, add the flour, castor sugar, baking powder, baking soda and salt into a large mixing bowl and lightly combine leaving a well in the centre.
Next, add the beaten eggs, orange juice, orange zest, chopped fresh thyme and olive oil to the well in the centre and mix until well combined but not over mixed.
Pour the batter into the greased baking tin and place in the oven for +- 40 mins or until golden brown and cooked through.
Allow the cake to cool slightly before removing it from the tin and letting the cake cool completely on a wire rack. Once cooled, sprinkle with icing sugar, slice and serve.
