Olive Pride Mediteranean grilled fish

X2-4 fresh Mackeral /hake fillets
2 T Olive Pride Blend
Salt and pepper
a handful fresh parsley, roughly chopped
1 T garlic, crushed
squeeze of fresh lemon
200g cherry/exotic tomatoes
Olive Pride Blend
4 garlic cloves, peeled and roughly chopped
A few sprigs of thyme, finely chopped
1 teaspoon balsamic vinegar
Heat the Olive Pride blend in a large pan. Season the fish fillets with salt and pepper. Add the garlic to the pan as well as the fish fillets. Lightly pan fry until golden brown and add the chopped parsley as well as a squeeze of fresh lemon.
For the tomato confit
Cut the tomatoes in half.
Heat the Olive Pride blend in a large frying pan and place the tomatoes, cut-side down, into the pan. Add some garlic and thyme. Turn down the heat and leave the tomatoes to slowly absorb the flavours. Once the skins are shrivelled and the cut side has coloured slightly, remove the pan from the heat and leave the tomatoes to cool. Crush some of the tomatoes (leave some whole) with the garlic and olive oil. Season with the vinegar, salt and pepper.
Spoon the tomatoes onto a plate, top with fish fillets and sprinkle with a little more fresh herbs. Serve with baked baby garlic potatoes or salad.
