Olive Pride Bone Marrow with Umfino

Olive Pride Bone Marrow with Umfino

Recipe by: Puseletso 
750ml water
1 T Olive Pride Blend
2 cups spinach, chopped
1 cup maize meal
250ml Clover Fresh cream
salt and pepper
for the bone marrow
1 T Olive Pride Blend
1 kg Bone marrow slices
Handful spring onions
Half red pepper, diced
Salt and pepper
To make the umfino:
Bring the water to the boil, add a touch of pride  and add fresh cream, salt and pepper. Gradually add the maize meal and stir. Close the lid and reduce heat to low. After 15 minutes, add the spinach and mix. Leave for 20 minutes until cooked. 
For the bone marrow
Add Olive Pride to a pan and heat up. Add the spring onion and pepper. Season with salt and pepper. Add the bone marrow and leave to cook for a few minutes. 
Add the umfino to a plate and add the bone marrow, as well as your choice of vegetable.
