Margie Classic Lime and Coconut

3/4 cup Desiccated coconut
250g Margie Classic (softened)
1 1⁄2 cups Caster sugar
1t Lime Zest
1 1/3 cups Self Raising flour
2 T Lime juice
2 T Milk
Extra desiccated coconut and lime zest (to decorate).
(If you don’t have any self-raising flour, use the same amount of cake flour and 1 ½ t baking powder)
1 1⁄2 cups Icing sugar mixture
1t Lime juice
3-4t Boiling water
Pre-heat oven to 160C. Using an electric beater, combine Margie Classic, sugar, and zest together in a mixing bowl until pale.
With the motor still running, add eggs one at a time.
Add Lime juice, milk and coconut, stir, gently fold in the flour and pour batter into a well-greased loaf pan.
Bake for 55 mins or until a skewer inserted into the centre comes out clean. Allow cooling on a wire rack while you make your icing.
For the icing, mix together the icing sugar and lime juice, then add boiling water 1 teaspoon at a time until smooth.
Carefully spoon icing over the cake, garnish with extra coconut and lime zest and enjoy!
