Clover Mama Bake Vanilla Snowballs

Vanilla Sponge:
1 Cup Sugar
3 Eggs, separated
15 ml Vanilla extract
¾ c Mama Bake, melted
1 cup Clover Yoghurt
1 1/3 Cup Self raising flour,sifted
 
Vanilla syrup:
1 cup Castor Sugar
1 cup Water
1 tsp Vanilla Extract
Combine in a medium sauce pan and allow to cook for about 15 minutes
 
Berry coulis 
Coconut
Strawberry Jam (Extra Fruit)
 
Method:
Preheat the oven to 160oC. Lightly grease a cupcake tin
In a large mixing bowl whip, the egg yolks, vanilla and ½ the castor sugar until light and fluffy. While still mixing, slowly add the Melted mama bake. Fold in the Clover classic yoghurt
Fold in the sifted self-rising flour, careful not to over mix. In a separate mixing bowl whip, the Egg whites with the remaining castor sugar until light and fluffy. Fold into the vanilla cake batter. 
Fill each cupcake mould ¾ full with the vanilla batter and bake for 15 minutes. Remove from the oven and allow to cool. Level of the cake to be flat and even. Roll in the syrup, then the coconut.  Roll some in berry coulis and then In coconut. Sandwich together with a good amount of strawberry jam and enjoy as a snack or with you favourite warm beverage.
