Mama bake maas doughnuts

2 free range large eggs
1 cup granulated sugar
¼ cup mama bake margarine
1t vanilla essence
3 cups cake flour
1t baking powder
1t bicarbonate of soda
Pinch of salt
1t all spice, ground
1t cinnamon
1 cup Clover Amasi

To garnish
Granulated sugar

In a bowl, cream the sugar and butter till it’s light and fluffy
Add the eggs to the mixture and mix until it’s creamy
Once the mixture is creamy, add the margarine, vanilla and maas, mix it until all is well incorporated
In another bowl, add the flour, baking powder, bicarb, salt, all spice and cinnamon together – once all is mixed through adding it to the wet ingredients
Place the mixture covered in to fridge and let it rest for at least 2 hours.
Roll out the dough onto a lightly floured surface, cut the dough with two different sized cookie cutters to form a doughnut shape
Heat up the frying oil in a pot, place them carefully into the oil and fry for a few minutes on both sides until light in weight and golden brown. Be careful not to fry off too many doughnuts at one time.
Once they are fried place it on a paper towel to drain off the excess oil and sprinkle with some cinnamon sugar and a dollop of whipped cream
