Low carb cheese cottage pie

500g lean beef mince
1 tsp oil
1 onion, finely chopped
3 carrots, finely chopped
100g button mushrooms, sliced
2 sprigs of fresh thyme
300ml beef stock
x1 tin chopped tomatoes
2 tbsp Worcestershire sauce
For the topping
1 cauliflower, roughly chopped and steamed
x1 tin butter beans, drained and rinsed
Clover mature cheddar, for the topping
Heat a large frying pan add the beef mince and fry for 5-8 minutes until browned.
Add the onion and gently fry for a few minutes until soften. Stir in the carrots, mushrooms and fresh thyme and cook for 2-3 minutes more. Add the stock, chopped tomatoes and Worcestershire sauce.
Season with salt and pepper and simmer for 15 minutes.
To the pot with the steamed cauliflower, add the drained beans. Mash the cauliflower and beans coarsely, Add in a handful of Clover grated cheese then season to taste.
Transfer the mince mixture to the ovenproof dish and top with the cauliflower and bean mash. Scatter the cheese, over the top then bake for 20-25 minutes until golden and bubbling. Serve warm.
