Clover Hassleback Cheesy Chicken

X4 chicken breast
Clover Cheddar cheese, thickly sliced to about 4cm
Clover Gouda cheese, thickly sliced to about 4 cm
Pickled jalapeno, sliced
Salt and pepper
1 tin chopped tomatoes
1 T tomato paste
1 T dried herbs
1 T brown sugar
salt and pepper
1 c Clover Tussers, grated
½ c sour cream
spring onions, chopped
fresh parsley and coriander, chopped
 
Preheat the oven to 180°C. 
 
Place the chicken breast onto a board and make slices at the top, across the whole fillet, to make slits. Becareful not to slice all the way into the chicken fillet. 
Place the thickly sliced cheese into each slit, alternating gouda with cheddar. Place the sliced jalapeno into each slit with the cheese. Place the chicken into a greased skillet and season with salt and pepper. 
 
Mix together the chopped tomatoes with the tomato paste,dried herbs,brown sugar and salt and pepper. Pour the sauce over the chicken and scatter over the grated Tussers cheese. Bake in the oven for aout 20-25 minutes until the chicken is cooked through. Once baked, serve with dollops of sour cream, a scattering of spring onions and fresh herbs. Serve with your choice of side e.g bake potatoes or fresh salad.
