Good Hope Soy milk mushroom risotto

Good Hope Soy milk mushroom risotto

3 T butter
1 onion, chopped
2 cloves garlic, minced
fresh thyme
3 cups mushrooms, sliced
1 c Arborio rice
2-3 c vegetable stock
1 cup GH soy milk
½ c leeks, chopped
1 tsp salt
½ tsp black pepper
 
In a large pan, saute the onion, garlic and herbs in butter for a few minutes. Add in the mushrooms and leeks and stir for 3-4 minutes. 
 
Add the rice and stir until well combined. Add a cup of stock and stir. Once the stock is soaked up, add another cup and keep stirring and simmering, until all your stock is used up. Pour in the soy milk milk and stir for a few minutes. Turn off the heat and season with salt and pepper to taste. 
Serve warm and garnish with fresh herbs.
