
Mac and cheese flapjacks

INGREDIENTS
175g plain flour
1 1⁄2 tsp bicarbonate of soda
1 free-range egg, beaten
284ml Clover Fresh Milk
1 tbsp dried herbs
3 tbsp oil + 1 tbsp
leftover mac and cheese
½ cup cheddar cheese (grated)
salt and pepper to taste
METHOD
In a bowl, sift in flour and bicarb. Make a well in the centre and add egg, milk, herbs and 1 tbsp oil.
Whisk together or use a spatula to combine all the ingredients.
In a pan, add 1 tsp oil at a time to cook each flapjack and scoop some batter into the pan. Give it a minute to cook before spooning some mac and cheese onto it followed by a sprinkling of cheese. Scoop a little more of the flapjack mix onto the flapjack and let cook for 3-5 minutes then flip over. Continue until you’ve used up the entire batter.
Serve warm as any time meal or snack
