Clover Fresh Milk Instant Ice-cream

500g Clover Fresh milk
12 free range egg yolks
200g sugar
2t vanilla paste
500ml cream
500ml liquid nitrogen

Combine the milk, eggs, sugar and vanilla in a mixer and mix well to combine. Add the cream last and slow incorporate. 

Add the mixture to a pot and slowly cook over a medium to low heat until the mixture becomes slightly thickened and sticks to the back of a wooden spoon and leaves a clear trail after running your finger through the mixture.

Allow the mixture to cool, you can place it directly into the fridge in a dish with a large surface area to help it cool faster. Once cooled pour the mixture into a mixture with the paddle attachment attached. 

Turn the machine on on a low speed before slowly pouring in the liquid nitrogen and setting the ice cream. This happens very fast so be ready.

Once set remove from the mixer and serve.
