Dulche de leche Chocolate Pudding

For the chocolate pudding
3 free range eggs
1 cup light brown sugar
1t vanilla extract
1/3 cup Clover Cream O'Naise
40g cake flour
1t baking powder
4T good quality cocoa powder
180g dark chocolate, roughly chopped

For the dulche de leche
4 cups Clover full cream milk, plus 3/4 cup extra
1 1/4 cup sugar
1/4t baking soda
1t vanilla extract

Method
For the pudding: In a large mixing bowl add the eggs and sugar and cream together until pale and fluffy. Add the vanilla and Clover Cream O'Naise to the mixture and mix to combine.
Combine the dry ingredients in a separate bowl before sieving into the mixture folding through the wet ingredients until well combined.
Grease a baking tray before pouring in the batter and baking in an oven preheated to 180C for 20-25 minutes or until a cake tester comes out with large crumbs attached.
To prepare the dulce de leche: Combine the ingredients for the dulce de leche together in a heavy based pot and bring to a gentle simmer before reducing the heat down to its lowest and simmering for about 1 1/2 hours - 1 3/4 hours wile stirring every few minutes to prevent the sauce sticking.
Once reduced by half add the remaining 3/4 cup of the milk to thin down the sauce when using for the pudding. If your not using the dulce de leche don’t add the extra milk to thin the mixture down.
Poke the pudding with a chop sticks creating holes before pouring over the delche de leche while still warm. Allow the sauce to soak into the pudding before serving.
