Cream O’Naise Southern Fried Chicken Sandwich
For 2 sandwiches
1 cup buttermilk
2 free range chicken breasts, butterflied
2 cups cake flour
1T cayenne pepper
Salt and freshly ground black pepper
Oil for dip frying
2 soft buns, toasted
4T clover cream’o’naise
4T pickles, finely diced
1T finely diced chives
Crisp lettuce for serving
Pickles, thinly sliced for serving
Combine the buttermilk and tabasco before adding the chicken breasts and marinating for 20 minutes or overnight. Combine the flour with the cayenne pepper, turmeric and seasoning.
Take the chicken out the buttermilk and add to the flour, turning over and pressing down to coat well in the flour. Set aside for 10 minutes.
Heat the oil for deep-frying. Carefully add the chicken to the oil and cook for 10 minutes. While the chicken is cooking combine the cream’o’naise with the pickles and chives
Add some of the flavoured mayo to the buns before adding some lettuce. Add the crispy hot chicken and top with extra mayo before finishing with the top of the bun.
