Coronation Chicken Salad
3 T Mayo
3 tsp curry powder
½ tsp ground cinnamon
2 T chutney
3 T sultanas
500g chicken, cooked and shredded
1 c Clover Classic Plain
2 celery stick, chopped
70g flaked almonds, toasted
Butter lettuce for serving
In a bowl, mix together the mayo, curry powder, cinnamon and chutney. Mix till well combined. Add the shredded chicken and the Clover Classic and mix well together.
Fold in some of the chopped celery and sultana’s and keep some aside.
Scoop the chicken filling into the butter lettuce cups and scatter over the rest of the celery and sultanas. Garnish with the flaked almonds and serve.
