Coconut and lemon slices

1 packet coconut biscuits, crushed
¼ c butter, melted
2 cups Clover Bliss lemon meringue flavour
1-2 gelatin leaves, soaked in water
coconut shavings for garnishing
 
Combine the melted butter with the crushed coconut biscuits and place into the bottom of a tray. 
Press down to form a crust. Mix the hydrated gelatine into the Bliss and mix well to combine. Pour into the prepared tin. Refrigerate until set and garnish with the coconut shavings. Slice into bars and serve.
