
Clover Classic Toffee Figgy pudding

Ingredients
200g dried figs, chopped
200g pitted dates, roughly chopped
2 cups boiling water
2 teaspoons bicarbonate of soda
1 cup butter, cubed
360ml brown sugar
4 Eggs
1 ½ cups self-rising flour
½ cup breadcrumbs
1 teaspoon vanilla essence
1 tbsp orange zest
pinch of salt
Toffee Sauce
150g butter
1 cup cream
1/2 cup soft brown sugar
Clover Classic Custard for serving
Method
Preheat oven to 180 degrees Celsius. Line a baking dish with baking paper .
Pour boiling water over the dates and figs add the bicarbonate of soda and stir. Set aside for 10 minutes. Purée the mixture in a food processor.
Cream the butter, sugar and vanilla essence. Add in eggs one at a time and beat well. Add the dates and fig mixture and mix well. Sift in flour and salt and mix in the breadcrumbs and orange zest until everything is well combined.
Pour batter into the baking dish and bake for 30-40 minutes.
For Toffee Sauce: In saucepan heat the butter, cream and sugar over medium heat and stir until the butter is melted. Cook until the sauce is slightly thickened. Spoon sauce over the sponge.
Serve with Clover Classic Custard and garnish with fresh berries or glace cherries
