Clover Classic Shish Kebabs

Clover Classic Shish Kebabs

2 boneless, skinless chicken breasts (or 4 to 5 boneless, skinless thighs)
1 medium onion
2 cloves garlic
1/2 cup Clover Classic
3 tablespoons vegetable oil
2 tablespoons tomato paste
1 teaspoon ground black pepper
1 teaspoon paprika
1 teaspoon salt
Garnish: oregano, sumac, and paprika

In a bowl, mix together all the spices along with the Clover Classic. Allow to marinate for at least 30 minutes. Skewer the chicken onto kebab sticks and cook in a 200C preheated oven for 20 minutes. Alternatively, braai the kebabs over some hot coals until chicken is tender. Garnish with oregano, sumac and paprika.
For the beetroot raita

200g pickled beetroot
1T tahini
1 1/2 cups Clover Classic plain yoghurt
2T roughly chopped parsley
2T finely chopped mint
Freshly ground black pepper to taste

Prepare the beetroot raise by simply combining all the ingredients together, mixing well.
Carve the chicken off the kebab and add to the flatbread followed by the beetroot raita.
