Home-made custard slices with Clover Classic custard

2 sheets puff pastry, thawed
3 cups Clover Full cream milk
1 cup clover classic custard
1 cup sugar
1 ¼ cup flour
4 egg yolks
1 Tbsp vanilla paste
½ cup icing sugar to garnish
Preheat oven to 180C.
Place the pastry on two greased baking trays. Prick evenly with a fork , take care not to go all the way through. Bake for 20-25 minutes or until golden brown and puffed. Remove from the oven and set aside to cool.
Cut the one sheet of pastry to the size of the rectangular dish you are using and set aside in the dish. Cut the remaining pastry into even rectangles to fit the top and keep separate .
In a saucepan bring the milk to a gentle simmer and remove from the heat. In a mixing bowl combine the custard, sugar, flour and egg yolks. Temper the egg mixture with the hot milk before adding the vanilla and returning to the heat.
Continue to stir over medium heat until the mixture thickens and the flour and eggs are cooked out.
Remove from the heat, evenly pour over the prepared dish with the pastry.
Gently place the pastry rectangles on top.
Refrigerate for up to 4 hours or until set. Dust with icing sugar before cutting up and serving.
