Clover Classic custard mousse

2 cups Clover Classic custard
1 cup Clover Fresh cream, whipped to stiff peaks
2 egg whites
1 tsp vanilla extract
2 tbsp castor sugar
Fresh berries for garnish
In a bowl, add the Clover Classic custard and fold in the whipped cream. Chill in the fridge.
Add the egg whites into a separate bowl and with a hand mixer, beat until soft peaks form. Add the vanilla extract and gradually add the castor sugar. Beat until stiff peaks form and the mixture is slightly glossy. Return the chilled custard cream mixture from the fridge and gently fold in the soft meringue mixture.
Return the custard mousse to the fridge and allow to slightly set. Garnish with berries before serving.
