Clover Classic Custard Mille Feuille

1 Roll Puff Pastry, defrosted
750 ml Clover Classic Custard
2 Tbsp Clover Butter, softened
2 Tbsp Corn Flour
1 Cup Peppermint Chocolate, Chopped
Cocoa Powder and Icing sugar to dust
 
Place the roll of Puff pastry on a baking sheet, prick with a fork and bake to packet instructions. Allow to cool before slicing into 3 equal slices. 
To make the custard:
Heat the Clover Classic custard in a medium sized sauce pan. Combine the Butter and Corn Flour in bowl. Pour a little of the warm custard mix into the butter mix and combine well. Pour the butter mix into the custard and allow to thicken (stirring continuously) Allow to cool to room temperature. 
To assemble, line a deep roasting/baking dish with baking paper. Place a sheet of puff pastry at the bottom, topped with a layer of custard filling and a sprinkle of peppermint chocolate.  Repeat this step one more time. Finish of with a layer of puff pastry. Place in the fridge for about 4 hours to set. Once set, slice and serve with a dusting of cocoa powder and icing sugar.
