Clover Classic Custard Floating Islands

3 Egg Whites
½ cup Castor Sugar
2t Vanilla Essence
1 cup Clover Fresh Milk
250g Strawberries (chopped)
5-10 leaves Fresh Mint (chopped)
2t Brown Sugar
200ml Clover Classic Custard (heated)
Begin by mixing together the strawberries, mint and brown sugar in a small bowl then set aside and allow to marinate.
Place your egg whites in a medium bowl and using an electric beater, beat until frothy and then add half of the castor sugar, continue beating for another minute, add the rest of the castor sugar and beat until the medium firm peak stage has been reached. Set meringue aside.
Heat the Clover Fresh Milk and the other 1 teaspoon of vanilla essence to scalding point making sure not to let it actually boil, then spoon a tennis ball sized amount of meringue onto the surface of the milk. After 1 minute, turn meringue over and keep poaching until the meringue has expanded slightly and uniformly firmed up.
Pour heated Clover Classic Custard into a shallow bowl and arrange the marinated strawberries into the center of the bowl, place the meringue on top of the strawberries and Serve!
