Clover Classic Custard Baked Apple and Pecan Cups

6 Golden delicious apples
2/3 cup + 6 T Pecan nuts (chopped)
1/3 cup Raisins (chopped)
¼ cup Desiccated coconut
2 T Maple/Golden syrup
1 t Lemon zest
¼ t Powdered cinnamon
¼ t Powdered nutmeg
6 T Peach or apricot preserve
1 cup (plus extra for serving) Clover Classic custard


Pre-heat oven to 190 C. With a knife cut off the top 3rd of your apple and a thin slice from the bottom (to keep the apple from falling over while in the oven), remove the seeds with an apple corer, then with a small sharp knife or melon baller, hollow out each apple, stopping 1-2 cm before you get to the apple skin. Place onto glass baking tray and set aside. (Don’t worry if the apples start to brown slightly, this will not affect the end result.)

Add pecans and raisins to a bowl, add desiccated coconut, maple syrup, lemon zest, cinnamon and nutmeg, combine well.

To assemble, spoon 1-2 T of Clover Classic custard into each apple, then fill your apple almost to the top with the filling and finish off with some more Clover Classic custard. Smear fruit preserves around the rim of each apple and sprinkles with more filling. Place on a baking tray and bake for 15-20 mins or until your apple starts to soften.
