
Clover Classic Custard and apple muffins
Ingredients
200g flour
2 tsp baking powder
pinch of salt
85g brown sugar
125ml milk
2 eggs, beaten
50ml Classic fat spread, melted
50ml Clover Classic custard
1 apple, grated
Method
Preheat the oven to 180C.
Mix together the flour, baking powder and salt .
In a separate bowl, mix together the sugar and eggs till thick. Whisk in the milk, melted fat spread and Clover Classic custard
Pour the wet ingredients into the dry and mix in the grated apple. Mix well together but do not overmix.
Pour the batter into a greased muffin tray and bake in oven for 15-20 minutes or until a skewer comes out clean. Allow to cool before packing into the lunchbox.
