Clover Classic corn fritters

200g flour
1 tsp baking powder
½ c milk
¼ c Clover Classic yoghurt
1 egg
150g corn kernels
2 spring onions, sliced
handful of fresh coriander, roughly chopped
1 red chilli, chopped
100g Clover mature cheddar cheese, grated
Oil for frying

In a bowl, combine the flour, baking powder, milk, Classic yoghurt and egg. Fold through the rest of the ingredients and season well with salt and pepper. The batter should be thick and not too runny.
Heat the oil and drop in spoonfuls of the batter. Cook until golden and drain on kitchen towel.
Make a dipping sauce by mixing together ½ c Classic yoghurt, 2 T sweet chilli sauce and chopped coriander. Serve with corn fritters.
