Chocolate rocky road fudge brownie

Clover Chocolate rocky road fudge brownie

2 cups dark chocolate chips
170g butter, cubed
½ cup milk chocolate, chopped
1 cup castor sugar
3 eggs + 1 yolk
5ml vanilla paste
100g cashews, roughly  chopped
¾ cup cake flour
Pinch of salt
¾ cup Clover condensed milk
1 cup mini marshmallows
½ cup dark chocolate chips, melted
Preheat the oven to 180C. line and grease a 20×20cm square baking tin with foil.
In a large mixing bowl melt 1 cup of the dark chocolate chips, the butter and milk chocolate until smooth and lump free.
In another mixing bowl beat the eggs and the sugar until thick and pale in colour about 3 minutes and add the vanilla paste.
Stir in the chocolate and butter mixture. Add the flour and the salt, half of the chopped cashews and fold in until well combined.
Pour half the batter into the prepared baking tin and bake for 10 minutes and remove from the oven. Sprinkle the remaining cup of chocolate over the semi cooked base, pour over the condensed milk and top off with the remaining batter to cover the layer of condensed milk.
Return to the oven for 35 minutes or until a cake tester comes out clean. Sprinkle over the mini marshmallows, remaining nuts and drizzle with the melted chocolate.
Allow to cool before cutting into squares. Enjoy with a glass of Clover Full cream milk.
