Chicken and Cheese Khathi rolls

Clover Chicken and Cheese Khathi rolls

To make cheese rotis for the khathi rolls
2 cups flour
½ tsp salt
1 T oil
1 cup water or as required
½ c Clover Tussers cheese
oil for frying

In a bowl, mix together the flour, salt and oil. Add in the cheese and gradually add in the water until it comes together to form a dough.
Knead the dough. Add more water if needed to form a soft and smooth dough. Allow dough to rest for 30 minutes. Divide the dough into small or medium sized balls. Dust the surface with flour and roll out the roti’s till they are thin. Fry them off in the oil until you see bubbles appearing on the rotis. Flip them and cook on the other side until they are cooked through.
To make the khathi rolls, fill them with chicken tikka masala, the curry sauce and a generous grating of Clover Tussers cheese and fresh coriander. Fold and enjoy!
