Clover Cheese Stuffed Potato Cakes

3 cups mashed potatoes
1 cup cake flour
2 free-range eggs
salt and freshly ground black pepper to taste
4 tbsp chives, finely chopped
1 cup Clover cheddar, grated
pulled beef, optional
Olive pride blend, for frying (about 6tbsp)
In a mixing bowl combine the mash with the flour, eggs, seasoning, and chives. Begin shaping small patties, about palm size. Add some of the Clover cheese in the centre. If you are using pulled beef, add some to the filling now before adding more potato to the top and sealing the filling inside, pinching the edges to secure the filling. Repeat the filling method with the remaining mash and filling.
Heat the oil over medium heat for frying. Add the stuffed parcels to the oil to brown for about 2-3 minutes before turning over and cooking for another 3 minutes.
Place the stuffed potato cakes on absorbent paper, season lightly and serve.
